Twice Baked Sweet Potato

Ingredients
2 Large Sweet Potatoes (estimate 1 potato per person)
2 tsp Orange Marmalade
1-2 tsp Sambal (add more if you like it spicier)
2 TBL Goats Cheese
Salt and pepper to taste
1 tsp Finely Chopped Chives (Optional-Garnish)
 
Method
1. Pre-Heat oven at 200 C
2. First Slice the Sweet Potato in half and place in a lined baking sheet. Puncture the top with a fork or slit with a knife to allow the steam to escape.  Cook for about an hour. 
3. Remove from the oven and allow it to cool.  Then scoop the flesh out and place in a medium sized mixing bowl.  Now mix the remaining ingredients thoroughly and transfer to a small casserole dish and bake for 15 minutes.  The top should crisp slightly and the cheese should melt through.
4. Garnish with chives and Enjoy! 
 
Note
Sweet potatoes are one of my favorite vegetables, and they are good for you!  It’s High in Beta Carotene plus Vitamins A and C. I sometimes just slice it into small rounds season it with some spices and bake it in the oven for a quick snack or meal. It’s easy, healthy, and tasty!
